- Hooray! At last I have found an easy to use sharpener which does an excellent job.
- This little machine does a superb job without maybe the mirror finish edges. I have now sharpened about a dozen knives, carbon steel, stainless steel, European and Asian style.
- It puts a very good edge on even my hardest Japanese knives.
- Thanks to this item you can get knives back to factory sharpness quite easily although you have to spent a little time polishing the edge to make it shaving sharp.
- If you want a great, reliable, easy to use sharpener that works every time, get some other sharpener and not get one of the Chef's Choice Electric sharpeners.
- I just sharpened 10 of my knives to razor sharp edges in hardly any time at all. It worked on a dollar store pairing knife and a 1955 Sabatier K Chefs Knife equally well.
- Man, this thing simply just works. My knives got REALLY sharp. I was able to find the infamous burr (which I never got with the other methods, even after lighting a few candles to the knife goddess).
- This product overall is easy to use and provides a satisfactory cutting edge in a short period of time.
- This device has rescued all my dull knife. Especially my Shun knife which I have tried to sharpen on a sharpen stone but never has reached my expectation.
- I love this sharpener. I own a mix of moderate to very expensive knives with different bevels. I have used the first stage of this 3-stage sharpener to convert my Western cutlery to 15 degrees rot match my Asian knives.
- Two angles of sharpening. Actually more if you want to sharpen only on one side for sashimi.
- Consistent quality sharpening. If you are doing it like it is mentioned in the manual, you will obtain a satisfactory sharpening quality.
- Perfectly restores the edges on my high quality Shun knives, which use the 15 degree angle. And having the 20 degree angle option lets me sharpen my other spares and knives for friends.
- I am also worried about the thin plastic blades that push the knife blade in the abrasive discs. Just doesn't look right!
- The only point of note that the blades are a tiny bit serrated after use due to the strong abrasives.
- This sharpener for 15 degree edges... not the European 20 degree edges, unless you want to convert them to 15 degree, in which it is very capable of doing it.
- You need to know when to use slot 1 and when NOT to. You need to have a good burr on slot 2, before proceeding to slot 3, or you won’t have a sharp knife.
- This sharpener, if you follow the instructions, will truly make your knives SHARP. Sharp enough that I've cut my hand three times because I'm not used to having to be as careful as you have to be with REALLY sharp knives.
- No blade damage there with the higher-quality steel -- just a wicked-sharp knife.
- These edges are so sharp, though I thought I was being extremely careful, I didn't know I was cutting myself.
- Easy use. It takes a little bit to understand that you do NOT need to press hard on the knife blade. Just press with a finger on top and don't wiggle the knife inside the sharpener.
- Clean operation. No extensive water/oil and cleaning need after the sharpening.
- If you have badly dinged knives the 1520 will remove a LOT of metal fast to a straight 15-20 bevel.
- It sharpens serrated knives as well. Would recommend it!
- The bevel will have a different look compared to the original.
- Great attention to detail features include a trap door to remove shavings from internal compartment, and the ability to renew/refresh the stropping/polishing discs when needed (not very often).
- I feel a good quality steel is necessary to touch up the knife edge even though it has the stropping feature for touch ups.
- This is one of the best countertop, home-use kitchen knife sharpeners I've used, and I would recommend it.
